I have found most things I needed now, took ages and lots of googling! Still need decals though, can't find them anywhere.

Got mine on aliexpress, (decals). Chose the ones with the big wing at the bottom of the tank that are for a newer version but fit fine on nc31. Just make sure you spray soapy water when you are fitting them to get rid of all bubbles and fit them in the right position.

The problem with looking for parts is the online sellers don't list by make, model and part. The way they do it is by part number and this is actually a much better system as bikes use common parts (eg. the calipers off a Cb400 Version S are the same as the ones used on the VTR1000 Firestorm) and so you can find what you need easier.
This being said I have found the best way to search for parts is using the part manuals (you can download it in the document section or below) and then searching google for the part number.

So say you want a rear indicator, this is item 12 on page 87 of the above document and has a corresponding part number of 33650-KBH-901. Quick Google search and the second options gives me a "WINKER ASSY.L RR".

I have used this seller before and although they take a while, they are genuine Honda parts.
This method is not full proof as Honda has stopped making a few parts for these bikes but I would say you can get 95% of what you need using this method
