What carbs and why?
Just out of curiosity, on an NC30, what carbs would you use for racing, and why? NC30 or NC35 carbs? What setup? :-)

Whatever works and is reliable to start with...
depends how much you then have to chase the power.
I went from trying to run HRC open carbs to road setup carbs - as they worked better...

I used to run the hrc nc30 open carbs on my racebike, they ran a treat and give a good power and torque increase over running an airbox setup (running no filter will probably shorten engine life between refreshes though).
For outright power I don't think anyone will argue that bigger carbs (vfr) are better - though outright power is probably only most important for the very top racers, the rest of us might be better off with good linear power. The rvf carbs are certainly less fussy when it comes to race setup (and ram air etc) fuelling requirements.
Interestingly, RLR bored out sets of vfr carbs for a bigger venturi on their 2004 Isle of Man TT rvf (that bike was very heavily mofified and made 85 hp!).
I have rvf carbs on my road nc30, slightly better manners on the road than the bigger vfr carbs I reckon, though perhaps not as much fun - the vfr carbs feel to have a bigger top end whack, though that may be because of a weaker midrange, I imagine both sets make roughly the same power but vfr carbs certainly feel faster.
