I think the best bit of advice is to get a second pair of hands. Royster and me did one of his bikes a few weeks ago and it was really easy with another pair of mits on-board.

to get the shims back in, i use a 4 or 5mm allen key to stick shim on and guide it in.

a dab of grease on the end to hold on the shim, plenty of light and a steady hand, and hold your breath and i found it fine.

though i have to admit, my index finger did hurt a bit holding all the rockers back

I find that using lots of kitchen foil[1] wrapped round everywhere helps if the worst comes to the worst too.

Reusable cable ties. I did exactly the same (and got the same pained finger) the first time I did one.

[1] Some people suggest rags but I'm always slightly worried about loose threads and fluff getting everywhere.

Is there any specific advantage of the NC3X's shims as opposed to the Locknut / adjuster found on the NC2x?

Although cams are probably different the adjusters are probably interchangeable.

Yes. Lighter and require less adjusting. Of course against that they are harder to adjust when they do need doing.

Dave gave me a hand doing mine and im half way there, was dreading it but wasnt too bad if im honest!

just waiting on shims arriving now...
