is it always best to do one carb, replace it, then move on to another?
i'm guessing they'll need a rebalence after this yes?

They come off as a set of 4...you'll see when you get started.
Don't take them off the bracket that connects them up. just take the float chamber cover off - the bit onf the bottom with 3 screws (made of soft cheese) and clean it all -check your jet sizes too as you can see them in there.
get a load of cleaner in the slides and make sure they move freely -
balancing carbs is easy but for now just get it working and if you think they need a balance afterwards then you know how to take them off etc.

ok, infact cms ill give it a crack tonight after work, im eager to get started to say the least..
any advise on what type of carb cleaner to use?
ive seen some motrax stuff but dunno if its any good?

carb/brake cleaner is just a solvent in a can. any of them will do. Don't use WD40 or the like though..
