OK cool. So that's ruled out the choke mech. It's sounding like you could be over-fueling and drowning the engine if it's dying so quickly. First thing I'd be doing is removing the carbs, strip and clean and make sure everything is as it left the factory.
Conventional wisdom says to know your limits. To know your limits you need to find them first. Finding your limits generally involves getting in over your head and hoping you live long enough to benefit from the experience. That's the fun part.

I'm not sure if Graeme France still sells recon carbs. I bought a set from him with jets to suit my exhaust a while ago, I can't remember exactly how much they were but I seem to remember them being quite reasonable. Might be worth checking it out if you don't fancy tackling the strip down task yourself?
