Sounds like you need an ABBA stand.
Putting no stress on the shock ie not having it compressed or stretched makes it easier to remove.
When using a rear paddock the weight of the bike is still on the rear shock. But if you're using an ABBA stand, put a brick under the rear tyre so that theres no stress on it.
You dont need any special tools to remove the shock. Just a socket set and allen keys to completely remove it. Its possible to do all the work with the exhaust on too.

Can't get an abba stand here, and if I import it it will be very expensive so I'd rather make do with what I've got, mate.

Yes.

I've made do in the past with a car jack under each footpeg. Not as stable but works well. Just wind each side up gradually, and use a piece of wood on top of the jack/under the peg. You could also lift the rear of the bike with a block and tackle or other device from a rafter if you have a suitable one.
