Rough running/starting NC23 following ground up build

Hi,
I've been gradually building an NC23 to replace my old one with better parts and intended to use it on track. That's changed somewhat as I need a bike to commute 10 miles to uni on for a few months and my Fireblade really isn't appropriate.
The situation is this, the bike only starts after quite a while of cranking off the starter button with the choke fully on. If the choke is switched off the bike cuts out. If the choke is left on for a few minutes then switched off, the bike will idle ok. If the throttle is opened at this point the revs rise erratically/not smoothly and not expected in sequence with the throttle position and then drop so the bike cuts out. If the bike is left running with the choke on for a good 5 minutes the response from the throttle is much better, and the bike doesn't cut out, although it still doesn't feel right somehow, it is still pretty erratic.
The engine set up is as follows: Gold ECU, Rebuilt Carbs from GF with larger jets fitted by him, Yoshimura cyclone exhaust with repair, engine with good compression, New 'one race old' spark plugs from GF, new oil and filter.
Other known issues: throttle grip sticks a bit (possibly due to spring at the carb end, dodgy tube or slightly gummed up lines).
Any help/suggestions much appreciated.
