I'm stripping and cleaning the rear caliper and fitting new seals, do I need to replace the rubber boots as a matter of course as well?

not sure if they're in need of replacing or not tbh, they seem pretty spongy but I don't know if they're meant to be like that or not, so I may take you up on the spare rubbery bits, cheers

Change them while you're stripping the rest of the caliper. It'll add a few extra quid to the cost but then you'll know everything's new and working as it should, and then you won't have to pull the lot apart just to get to the boots later in the year.
