RVF not idling properly...

Hey guys,
I'm currently in the process of restoring my RVF400 after an accident, it's starting at the moment, but it won't sit idling unless it's on full choke. I had it on for about 5 minutes and even then it would turn off when I took the choke off. I've also noticed that it's jumping around the revs, up about 200 or so then down again and up and down... Not entirely sure what the problem is. I adjusted the idle up from about 1500 to 2k then up again to 2.5 and still got the same thing.
Also noticed that when I pulled the throttle quickly it would stutter around 5k for a second then go up, but opening it smoothly it worked fine, pretty sure that's normal though.
The exhaust is also blowing a small amount of white smoke, though this might just be from it sitting for about 2 months.
Any ideas?
