any idear of what the pros and cons are of not running a thermostat on a bike ???

The thermostat stays closed to allow the water temp to rise to optimum temp and then it opens and stays open at normal temps. People remove them to try to get a higher water flow rate and hence higher cooling capacity.

I see it that the water pump is the weak link if you wanted cooler running. So..I'd leave the thermostat in..

in some countries, they remove them before vehicles leave the shipping yards!
for the UK.. id leave it in and alone!

Thermostat fitted on a road motorcycle , this allows the engine to warm up and gain normal running temp quickly so you can use the machine at its desighned performance without fear of premature wear, it will also then during the useage automatically open & close as the engine temp dictates to maintai its operating temp.
If the motorcycle has the thermostat removed this will, if only used on the road (not racing) cause the engine to take a very long time to warm up if it got to normal running temp at all because of the lack of restriction in the cooling system with it removed. This would cause engine wear due to engine components not getting to correct operating temp ie if your pistons are hotter than the cylinders the would pick up ( partially sieze) = loss of compression and more wear on rings & pistons as a result.
As for removing for racing this is done to increase water flow through the cooling system at extreme engine load/demand which will keep the temp down. The machine would have been warmed up in the paddock prier to riding it & then wouldnt get thrashed on the first lap of practice / warm up.
This is just a brief pro con not the gospel, purely to give an idea.

Nicely put, I thought about removing mine from the track bike but although the bike gets really hot on track it also spends 40mins cooling between sessions and IMHO not worth the hassle.
