Has anyone used the Factory Pro Kit? What jet size and needle settings did you use? Did they improve performance?

Here is my 2c worth.
They can improve performance but don't expect to buy something off the shelf and fit it in and it work 100% straight away, a generic kit is never going to be optimised for your bike.
Jetting varies a lot on these bikes depending on air-filter, exhaust system and general state of tune of the engine.
The standard kit you brought was designed to work with a specific configuration of bike (does it say stock or modded?) i.e. the zxr dynojet kit is designed to be used in conjuction with the micron exhaust system.
You'll still need some dyno time with the bike, if anything just to check it is running ok, you don't want it running mega lean anywhere, this can be really bad for the engine (not so likely though if you have put bigger jets in)
Take a few configurations from here, work out where you approximate jetting should be and then take it to the dyno and go from there.. should be able to get a pretty sweet setup.
Most configurations of NC30 have been well documented here, normal jets are cheap 2 / 3 pounds each. Unless your kit comes with adjustable needles / different throttle slide springs etc (which aren't really necessary on and NC30 anyway) I'd just goto the dyno and get it setup there...
As for your 'should I leave i standard' have you not noticed an improvement? Sureley if it runs better you should leave it like that...?
