I had a look at mine recently and for a couple minutes thought I had the same problem but turned out that I could see 3 pilot screws looking from one side and only one from the other (obviously I thought I would see 2 from each side) Have you checked all carbs from both sides?

Check that you're looking in the correct spot on the carb body. This pic shows one of the pilot screws, all 4 are on the inside of the carbs:
Don't confuse them with the float bowl drain screws which are located on the actual float bowls, not the carb body.
This pic was taken from the carb jetting thread - plenty of other carb pics which might help you:

I'd be very surprised too if it idled if you were missing the air screws, though I've never tried this!

Thank you for the carb thread, i found it highly useful. In conclusion, the bike now runs fine. i found the pilot screws, ( i was looking in completely the wrong place, and although i could see the pilot screws, i thought they were something else as i wasnt expecting to see them facing inwards ) i turned them all the way in, then back out 2 turns, made sure everything else in the carbs was in the correct place and clear of debris etc, took her for a run this morning and.. it was amazing, i had forgotten how much power she has through mid range. Again, thank you for the thread. Most useful :)
