Check the simple and cheap stuff first. I had a similar problem for a long time and cheacked the bearings, discs etc only to find (as Tony says) it was merley the front mudguard chattering.
A new set are not expensive but any wobble can also be fixed with a single wrap of electrical tape on the top of the fork lowers where the bracket sit.
Gotta be worth a look

Fork bushes would be my guess. Did they look in good condition when the fork seals were done?

The wife's Ducati did the same thing... It acted like the headstock bearings but it turned out to be that the front discs were slightly moving on the carriers where the buttons attach the two.

I agree with tornado check the discs, sit on the bike apply the brake rock the bike hard as you can to see if the rotors move on the carriers that will make a knocking sound.

Did you ever figure out what was causing the knock?

No, not yet.
That's why i have not replied.... In a few days i will replace front wheel bearings.
If that does not "cure" the problem, i will over re-tighten the head stock bearings and then re-tighten to the specified torque.
Hope these actions will help.

Can you just clarify, is it a single knock each time you brake, or a constant knocking as you're braking?
If it's the former, then check the Head Bearings, Fork Brace/Mudguard, Fork Bushes, Caliper Mounts, Pads, Disc mount Bolts, Disc Bobbins.
If it's the latter, check the Disc surfaces and Wheel Bearings.

...Let's say i am moving with 80 km p/h and i'm about to reach the red light at a distance of 500 meters. I am going into progressive braking to reach final stop at the red light.
At the last 5 to 10 meters (and until final stop) of this procedure i get a constant knocking
