It'll run lean as the fuel/air balance will alter due to more air coming through. Remedied by switching to bigger jets, although it depends on what jets you're currently running.

9 times out of 10 people just install the restrictors and dont mess with the jetting, so while it was restricted it would of ran a bit poorly , im guessing if your removing the restrictor kit it will proberbly run how it should now (providing the previous owners never rejetted it for the restriction)
if your removing the restriction its a good idea to open up the carbs while there off and give them a good inspection to see whats what, id work on them one at a time to avoid mixing bits up ,
