Are your jets worn or wrong?
Not trying to do Rick out of any money but i've never changed a set of pilot or main jets in a carb that wern't the wrong size. Even most of the dirtiest ones clean up quite well.
3 turns out does seem quite too rich! make sure all the rest of the carbs are setup properly.
Did you take the emulsion tubes out too (the main jets screw into the end of them) the front and rear carbs have different emulsion tubes so don't mix them up!

I'm changing the main jets as I'm changing from a standard can to a race one, and as the bikes been stood for a year, it was sorned by the previous owner until he MOT'd it in May, I've bought new pilot jets as a precaution.
Unfortunately the new bits didn't arrive in the post from Rick today so I haven't yet taken everything apart but I will indeed take the emulsion tubes out and give them a thorough dunking in carb cleaner prior to refitting, I did note on the guide that there are different sizes front and back so I will make sure the right ones go in the right places. In fact as I'm getting new jets and gaskets I may well start the strip down prior to everything arriving anyway, I'm hoping the post office get their act together for delivery tomorrow otherwise it'll be the middle of next week before I can get back to it.

yep, get it all apart and cleaned out, blowed out (make sure you dont get the rubbers of the digphrams with carb cleaner as they'll swell up, just wipe them with a damp cloth)
clean everything else fully and get it all ready to just drop the parts in and refit!
