It's better not to skimp on a chain when it comes to nc30's, they don't have a cush drive which puts a lot of strain on the chain.
That rhymes.

I'm not 100% certain that's what it is yet, but it seems the logical problem. I was hoping to put off changing the chain&sprockets just yet, because I haven't taken the bike on the track yet (my primary excuse for getting it), so I don't know how the gearing will suit there. It's much taller than I'd like for the street though, so I'd like to go 0/+2 or even -1/+2 if it also feels tall on the track.

The best gearing compromise for road and track is to fit a 14t front sprocket in my opinion.
It gives much better acceleration over the standard nc30 gearing (15t front/40t rear) and you won't notice any top speed loss on the track.
Just make sure it's the same pitch that your chain/sprockets are now. 525 is standard but most usually have 520 fitted as it's easier to find sprockets in that pitch. Pitch size is stamped into some of the chain links.
Changing gearing will throw the speedo out as it's driven off the gearbox and doesn't take into account different sized gearing. You can fix it by using a pushbike speedo, aftermarket dash, or just put up with it as it's a small price to pay for significantly better acceleration!
