Sh1t in carbs maybe worth a clean and spark plugs?? You been filling up at the normal gargae lately or tried somewhere on the fly?? Plugs or fuel is where I'd start looking... can't beat a bit of carb cleaner :) just make sure the fag is out 1st!!!

When it gets to 7000 and starts spluttering does it rev cleanly if you close the throttle slightly ?

The fuel supply is coming from a combination of idle & main jet at those revs, most probably a float valve isnt working properly or your air filter is blocked. Take the carbs off & blast all passageways with carb cleaner with diaphragms removed, its especially necessary after the bikes been stood for a while and you didnt drain the float chambers
