Unlikely both coils would fail at same time, if you wish to simply check for good spark from the coils:

1. disconnect the blue/yellow and yellow/blue wires from each of the ignition coils,
2. connect a flying lead to each of the now unused coil terminals
3. turn on ignition and RUN switches.
4. connect the free end of one of the flying leads momentarily to chassis, spark should occur at the plugs,
5. Repeat procedure for other flying lead.

You actions are those of a set of points.

Thanks for everyone input, I admit defeat finally. I am going to pop it on the trailer this weekend and take it to a specialist bike shop. I know a old man who still works on these machines, he said he will look at it for me. I have officially exhausted my skillset and am happy if someone else can diagnose this for me. Ive spent the last two years struggling with this bike, its time for a pro to finish it off. I will update asap. Pity that the first time it starts I wont be around to enjoy it, but at least I can learn something for next time once someone else fixes this for me. Hopefully it doesnt cost much!

If I had to wager a guess, Id say throwout bearing. Or something misassembled in the clutch basket. Does it look like someone else has taken it apart?

How would a bearing or a clutch have any effect on ignition though?

I Would agree sounds like the main kill switch or the neutral or stand kill switch.
