NC23 issues

So picked up an 88 nc23 bit of a dog probably paid to much but not ridden a bike for 5 years and my 'want' got the better of me.
Starts no trouble on the button needs a bit of choke but will idle around 1300 when warm, bogs down throughout the whole rev range and I haven't got it up past 7 grand really as bogging becomes worse, doesn't hunt on idle or over run, I fitted a new fuel filter today as it had a huge and rotten car filter on it which was causing a nasty bend in the tank hose, whipped the air box off and seems to be over fuelling,
It back fires when letting off but I think its firing on all 4 sounds ok on idle, I'm not that hot of a mechanic but it sounds like a fuelling issue carbs probably need a clean and balancing.
All down pipes heat up, it gets hot quickly! but temp gauge is either dodgy or theres a cooling issue, oil seems pretty clean and water has no signs of head gasket.
Haven't checked the plugs yet thats my next step, and going to remove the carbs this weekend and have a proper look.

Any ideas/help much appreciated.

Its a bit of a frankenbike, random screws, sealant, zip ties, wrong colour fairings originally black (aftermarket I believe) It rides and stops but is obviously not right.
down pipe is held on with random bolts and looks a bit worse for wear but I cant see any leaks, has a chav tastic blue flame can with a bolt snapped off in it, baffles removed.
brakes ok, forks are a little spongy, rear shock seams a bit slack although I'm pretty heavy and tall, all lights work and tac and speedo seem to be ok.
I couldn't resist the twin head and tail lights and general look of the nc23 I already love it and can see it being pretty awesome when running right. I dont mind it being a bit of a mismatched machine but it needs to run well.
I hope I don't end up hating it or running out of money trying to sort it out haha

Also managed to score an unused Doohan rep arai lid pretty cool and same age as the bike

few questions:

can I balance the carbs myself (only ever done single car carbs by ear and trial and error )
What year cbr 600 rear shock will fit the nc23?
Any forum members in or around the somerset area?
