Jus stripped rear hub off ready for new one from rick o should I be thinking of replacing the bearings because they are there or is a grease up sufficient

Are you swapping the whole eccentric, or just the stub axle? For what reason? What condition are the bearings in?
Typically you would just clean and grease the bearings, but I have to wonder why you are asking.

I've taken the hub out so I can fit modified one from rick o to take the 750 wheel and wondered really wether I should change the bearings in the holder while hub is off or wether it's a case of just a grease up normally

Gotcha. If not damaged, just clean up and regrease.
