Rear brake fluid top up?
The rear brake reservoir on my 2000 CB400SF has a metal bracket above it, so I'm not to sure how your meant to open it. Do I have to unbolt it, or is the some trick to it?

You shouldn't ever need to top up the fluid. If it is low, then it probably means your pads are nearly worn out. Replace them and the fluid will be full again. Otherwise, you can unbolt the reservoir from the bike to fill it, makes things easier.
