Hello- I'm in the US and am in the final stages of importing an NC30 from Japan. 150/18 rear tires are very scarce here, but I have seen some very old forum posts about some 160 rears that will fit. Is anyone currently running a 160 rear able to confirm which tires will fit without rubbing? Seems like Pirelli Angel GTs might be an option.

You'd be better off with a 17" conversion. I wouldn't put a touring tyre on a p0cket r0cket.

160/60 profile are massive balloons and would be a poor option
I bought a new BT090 last year in 150/60/18 sizes - they still exist...

You might want to look for some Dunlop Alpha tyres, or invest in a 17 inch conversion (either RVF wheel, or a modified hub to fit an RC36 rim)

I've got a Metzler 160/60 on mine as there were no 150/60 18 in NZ at the time. no rub and seemed to hold pretty well to the road and track.
