Has anyone had any bother from the (UK) law when running without the baffle on a stamped can? Have got the baffle (and tools to fit it) under the seat hump in case.

i run my full Ethos with mercury cans without baffles, never had a problem. Obviously i know a lot of coppers and the only reason i reckon you would get pulled is if your riding like an arse , commited an offence or they doing an an operation of some sort ie an ANPR etc.

I run my bike on a daytime MOT with a micron race end can at 105dB's and as ibby4585 says, providing you arn't riding like your at the TT it you should be okay.
