How do you feel now its gone?
All you need to do is make sure you get a receipt of sale with the name / address / signature of the new buyer (just incase to cover your own back. date and time it.. )
Give him the V5 to fill in and MOTS and things at it will help register the vehicle in Germany.
I'd give him a copy of a reipt of sale too.
After the sale just write a letter to the DVLA saying that the bike (include the reg number on the letter) has been sold to a foreign national for permanant export.
Thats it.
Youll get a confirmation letter a few weeks later saying that the vehicle will be de-registered.
I dont think its changed since then but you can always phone the DVLA.
Some people fill in the permanant export form and send that to the DVLA as well as a letter but I always thought that was for your own use. (i.e you are exporting it) hence Ive never sent it, just a letter.
Is he riding it back? he should have temporary German plates (at least for car, I cant see why they dont have them for a bike) if not make sure the letter is timestamped.. any speedig points after the sale will still come to you until its re-registered in Germany.
